Fresh Blueberry Muffins – one of the best ways I know to relieve stress is to bake. Here’s one of my favorite recipes:
Blueberry Muffins
1 egg
3/4 c milk
1/2 c vegetable oil
2 c flour
1/3 c sugar
3 tsp baking powder
1 tsp salt
1 c fresh blueberries
Heat oven to 400. Grease bottoms only of 12 muffin cup pan.
Beat egg lightly. Stir in milk, blueberries and oil. Combine dry ingredients in separate bowl and use metal whisk to remove lumps and aerate. Stir dry ingredients into liquid until just moistened. (batter will be lumpy). Fill muffin cups about 3/4 full. Sprinkle tops lightly with sugar. Bake until golden brown, about 20 min. Immediately remove from pan.
